In Japan, they say that its not necessary to salt dishes served with Sudachi juice, Sudachi juice has an elegant acidity that is sufficient all on its own.

Sudachi is twenty times richer in vitamin A than a lemon,

the peel contains sudachitin

which is a polymethoxyflavone, - a powerful anti-oxidant and anti-inflammatory.

It can also be used grated, as a condiment.
