Bergamots have been grown since 1750 near Reggio di Calabria, Italy for their essential oils. There is also a small production in Africa. There are three varieties : fantastico, femminello, castagnaro. It is harvested from December to February.

The fruit is generally harvested just before maturity when the peel is richest in essential oils. The essential oils are more interesting for culinary purposes when harvested later, as the peel just starts to turn yellow. Like most citrus the leaves are also very aromatic.
